True Love cannot be denied, despite Rumplestiltskin's best intentions to keep Belle safe by staying away from her. He tried to make sure that his cursed self and hers would be far apart in Storybrooke, but never counted on the way they would be drawn together. Dark Ones don't die. Instead, their souls are transported to the Vault, where they remain for eternity with nothing save each other and their own darkness for company. Despite his sacrifice, Rumplestiltskin was no different...and his time in the Vault will scar him forever.
Rumplestiltskin didn't switch the dagger on Belle - he switched it on Regina. It's the only useful trick he learned from his useless father, and Regina never even touched the real thing back in the barn.
